Typical of the southwestern part of Germany, these homemade finger-shaped potato noodles are most commonly sautéed until golden brown with onions, bacon and sauerkraut.
1 lb boiled potatoes
1 lb all-purpose flour
7 ounces butter
Combine mashed potatoes, flour and egg. Add a little nutmeg and salt. Mix to a firm paste and form into shapes the size of a finger. Roll potato fingers in flour and fry in butter until golden in color. Drain on kitchen paper and serve.
