Smoked Mackerel Rillettes

Rillettes usually refers to meat such as pork or duck preserved in fat, but for a lighter take, smoked mackerel is combined with chives, butter, and sour cream. Serve the rillettes on pumpernickel toast points, in endive leaves, cucumber slices, or with whole grain crackers.
Servings 8 appetizer portions

Ingredients
  

  • 6.7 oz canned smoked mackerel in natural juice
  • 2 tbsp unsalted butter softened
  • 3 tbsp minced chives
  • 1 medium shallot minced
  • 1 tsp sherry vinegar
  • 1 tbsp fresh lemon juice
  • 1/3 cup sour cream
  • pumpernickel toast points, endive spears, cucumber slices, or crackers for serving

Instructions
 

  • Combine the smoked mackerel and the butter in a medium bowl.
  • Add chives, shallot, vinegar, and lemon juice, and mix gently to combine well.
  • Fold in the sour cream and chill mixture for at least one hour before serving.
