Chocolate Almond Cherry Cake

A family favorite cake made with chocolate, ground almonds, and morello cherries. The cake's name sake comes from Paul Hörbiger, a beloved Austrian movie star from the 1940s to the 1960s.


  • 5 oz confectionary sugar
  • 5 oz butter
  • 4 eggs
  • dash salt
  • 4 tbsp breadcrumbs
  • 3 oz semi sweet chocolate
  • 5 oz grated almonds
  • 14 oz morello cherries or raspberries, blueberries, blackberries
  • 1 cup whole almonds
  • 1/2 cup chocolate glaze


  • Heat oven to 350 F
  • Combine the confectioners sugar, butter, egg yolks and salt. Beat together well until foamy.
  • Beat the egg whites until stiff. Add and carefully fold in the breadcrumbs, chocolate, ground almonds, and egg whites.
  • Pour batter into 9 inch form and top with the berries.
  • Bake for 30 – 40 min.
  • Remove from oven and let cool down
  • Optional: Add chocolate glaze or melted chocolate couverture, whole almonds and pitted cherries on top
