Marinated Cheese (Handkäse mit Musik)

Handkäse is a sour milk cheese that's a culinary speciality of Frankfurt. The "Musik" is a rather euphemistic term for the natural human sound generated after consuming onions.


  • 8 ounces German Handkäse
  • 2 tablespoons vinegar
  • 4 tablespoons oil
  • salt
  • white pepper
  • 1 teaspoon mustard
  • 3 onions
  • 3 cups cider vinegar


  • Cut cheese in slices.
  • Prepare marinade. Combine vinegar and oil, mix well and add salt, pepper, mustard. Peel onions, chop and add to marinade. Add cider vinegar and mix well.
  • Pour marinade over sliced cheese and leave to stand before serving.

Herrings with Cream Cheese Sauce

Herrings with Cream Cheese Sauce (Hering mit Frischkäse-Sauce)

A herring appetizer of Matjesfilet herrings with blanched apples and onions, sauced with a creamy apple-onion sauce.


  • 2 apples
  • juice of one lemon
  • 2 medium onions
  • 4 canned Matjesfilet herrings
  • 8 ounces cream cheese
  • 1 small carton cream
  • salt and freshly ground pepper
  • dill for garnish


  • Wash the apples. Core but do not peel them. Cut into thin slices. Pour lemon juice over the apple slices. Peel the onions and slice into thin rings. Put into boiling water and allow them to sit for 3 minutes.
  • Put the Matjes filets onto a plate and garnish with some of the apple and onion slices.
  • Mix the cream cheese with the cream and add the rest of the apple and onion slices. Season to taste with salt and pepper. Pour a little of the sauce over the filets and serve the rest separately. Garnish with dill.
