Asparagus Panna Cotta

Panna Cotta with an Asparagus Base

White asparagus is typically thought of as a side dish for a main meal. However, in this interesting take on an Italian classic, white asparagus is used to enhance a Panna Cotta dessert.
Servings: 4 people
Ingredients
  • 1-1/2 cups white asparagus
  • 2/3 cups cream
  • 2/3 cups kefir
  • 2 sheets gelatin
  • salt
  • nutmeg
Instructions
  1. Peel the asparagus and cut it into thin slices
  2. Add the slices of asparagus with the cream in a bowl and heat it for 20 minutes over a low flame
  3. Sieve out the asparagus and add the other ingredients to the mix
  4. Stir thoroughly before pouring the mix into glasses
  5. Refrigerate for at least three hours to let the panna cotta settle before enjoying
