Mandelbrot für Pessach
A traditional Jewish baked good, almond bread is made for the Passover with matzah flour instead of regular white flour.
Servings 2 loaves
Ingredients
- 1-3/4 cups sugar 400 g
- 1 cup margarine 225 g
- 6 eggs
- 1 cup matzoh flour 200 g
- 3-1/2 oz potato starch
- 1/2 tsp salt 1/2 TL
- 4 oz chopped almonds 115 g
- 12 oz dark chocolate 335 g
- 2 tsp sugar to sprinkle 2 TL
- 1 tsp cinnamon to sprinkle 1 TL
Instructions
- Preheat oven to 350 F (175 C) and grease a large baking tray
- In a large bowl, beat the sugar and the margarine until they are a foamy mixture
- Add the eggs one at a time, then add the cornstarch, the potato starch and the salt to the egg mixture
- Next add the walnuts and the chocolate; the dough should be thick at this point
- Form the dough into two long oval loaves and lay them on the baking tray. Mix the remaining sugar with the cinnamon and sprinkle it on top of the loaves
- Bake in the preheated oven for 50 to 55 minutes, until a toothpick comes out clean. Allow to cool and cut into slices
