White asparagus is typically thought of as a side dish for a main meal. However, in this interesting take on an Italian classic, white asparagus is used to enhance a Panna Cotta dessert.

  • 1-1/2 cups white asparagus
  • 2/3 cups cream
  • 2/3 cups kefir
  • 2 sheets gelatin
  • salt
  • nutmeg


  • Peel the asparagus and cut it into thin slices
  • Add the slices of asparagus with the cream in a bowl and heat it for 20 minutes over a low flame
  • Sieve out the asparagus and add the other ingredients to the mix
  • Stir thoroughly before pouring the mix into glasses
  • Refrigerate for at least three hours to let the panna cotta settle before enjoying
