A quick and simple version of the classic family-friendly Austrian dish. In German, schinken means “ham” and fleckerl is a type of Austrian noodle that is handmade and square-cut.
- 14 oz Fleckerl noodles or spaëtzle or tagliatelle, 400 g
- 11 oz cooked ham or Black Forest prociutto 300g
- 2 cloves garlic
- 1 onion
- 1/2 cup sour cream 100g
- 1/2 cup whipping cream 100g
- 3 tbs olive oil
- 2 tbs parsley chopped
Cook pasta according to package directions.
While the pasta is cooking, peel and dice the onion. Cut the ham into small cubes. Peel and crush the garlic with the flat of a knife.
In a large pan, heat the olive oil. Add the garlic and sauté briefly, then add the onions and ham and sauté.
Mix the sour and whipping cream together, season with salt and pepper. Wash the parsley, shake it dry, and mince it.
Pour the cream over the cooked pasta. Add the ham and onions and mix well.
Sprinkle chopped parsley over individual plates before serving.
