Schinkenfleckerl
A quick and simple version of the classic family-friendly Austrian dish. In German, schinken means “ham” and fleckerl is a type of Austrian noodle that is handmade and square-cut.

Ingredients
- 14 oz Fleckerl noodles or spaëtzle or tagliatelle, 400 g
- 11 oz cooked ham or Black Forest prociutto 300g
- 2 cloves garlic
- 1 onion
- 1/2 cup sour cream 100g
- 1/2 cup whipping cream 100g
- 3 tbs olive oil
- 2 tbs parsley chopped
- Salt
- pepper
Instructions
- Cook pasta according to package directions.
- While the pasta is cooking, peel and dice the onion. Cut the ham into small cubes. Peel and crush the garlic with the flat of a knife.
- In a large pan, heat the olive oil. Add the garlic and sauté briefly, then add the onions and ham and sauté.
- Mix the sour and whipping cream together, season with salt and pepper. Wash the parsley, shake it dry, and mince it.
- Pour the cream over the cooked pasta. Add the ham and onions and mix well.
- Sprinkle chopped parsley over individual plates before serving.
