Handkäse is a sour milk cheese that's a culinary speciality of Frankfurt. The "Musik" is a rather euphemistic term for the natural human sound generated after consuming onions.

  • 8 ounces German Handkäse
  • 2 tablespoons vinegar
  • 4 tablespoons oil
  • salt
  • white pepper
  • 1 teaspoon mustard
  • 3 onions
  • 3 cups cider vinegar


  • Cut cheese in slices.
  • Prepare marinade. Combine vinegar and oil, mix well and add salt, pepper, mustard. Peel onions, chop and add to marinade. Add cider vinegar and mix well.
  • Pour marinade over sliced cheese and leave to stand before serving.
