Halve Hahn comes from Cologne and has nothing to do with poultry. Halve Hahn can be ordered in every Rhineland pub. It is a halved Röggelchen (rye roll) topped with somewhat aged-aged Gouda cheese and mustard. In High German one, Halve Hahn would mean "half a rooster."

Ingredients

  • 1 rye roll
  • 1 slice somewhat aged Gouda or Emmentaler, not too thinly slices
  • onion rings
  • some butter
  • mustard

Instructions

  • Butter the opened half of a small rye roll.
  • Then add a slice of Goude or Emmentaler cheese, and a few raw onion ring.
  • Add a dab mustard and the Halve Hahn is done.
  • Traditionally served with the original Kölsch, the Rhenish beer.
