Grööner Hein (Birnen Bohnen und Speck)
A traditional healthy dish from Northern Germany, great flavor combination.

Ingredients
- 6 pears peeled and sliced
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 lb fresh green beans broken in half
- 1 teaspoon salt
- 1/2 lb bacon
- 1/4 cup sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
Instructions
- Place pears in a pot with warm water. Add 1 tbsp lemon juice. Bring to a boil, reduce heat, simmer for 15 minutes.
- While pears are cooking, cook bacon in a skillet. When crispy, remove to a plate with paper towel and reserve the bacon grease.
- After simmering the pears for 15 minutes, add the beans and salt. Drain the pears and beans, and crumble in the bacon.
- Add sugar, vinegar, and 1 tbsp lemon juice to the bacon grease and pour over pears, beans, and bacon.
- Serve hot.
