Spinat-Gnocchi mit Schinken und Ei

Ingredients
- 1 tbsp butter
- 1 clove garlic
- 1 onion
- 1 tsp vegetable stock
- 16 ounces frozen creamed spinach 450 g
- 3 eggs
- 1 pkg fresh gnocchi 500 g
- 1 ounce grated parmesan cheese
- pepper
- salt
- 4 slices Black Forest ham
Instructions
- For the eggs, boil water in a small saucepan. Heat the fat in a saucepan. Peel the garlic and onion, finely dice and sauté in them
- Stir in 3/8 l water and stock, bring to the boil. Add the spinach without defrosting. Cover and simmer for approx. 8 minutes, stirring frequently. Cook the eggs in boiling water for about 8 minutes until they are waxy
- Stir the gnocchi into the spinach and simmer for about 2 minutes. Stir in 2 tbsp grated parmesan. Season everything with salt and pepper
- Quench eggs, peel them. Spread the gnocchi and spinach on plates. Halve the eggs, arrange with the ham on top. Scatter the rest of the parmesan on top
