Spinach Gnocchi with Ham and Egg

Ingredients

  • 1 tbsp butter
  • 1 clove garlic
  • 1 onion
  • 1 tsp vegetable stock
  • 16 ounces frozen creamed spinach 450 g
  • 3 eggs
  • 1 pkg fresh gnocchi 500 g
  • 1 ounce grated parmesan cheese
  • pepper
  • salt
  • 4 slices Black Forest ham

Instructions

  • For the eggs, boil water in a small saucepan. Heat the fat in a saucepan. Peel the garlic and onion, finely dice and sauté in them
  • Stir in 3/8 l water and stock, bring to the boil. Add the spinach without defrosting. Cover and simmer for approx. 8 minutes, stirring frequently. Cook the eggs in boiling water for about 8 minutes until they are waxy
  • Stir the gnocchi into the spinach and simmer for about 2 minutes. Stir in 2 tbsp grated parmesan. Season everything with salt and pepper
  • Quench eggs, peel them. Spread the gnocchi and spinach on plates. Halve the eggs, arrange with the ham on top. Scatter the rest of the parmesan on top
