Vegetarische Frikadellen
Hamburger patties made with carrots, zucchini, broccoli, bread crumbs and other meatless ingredients on a pretzel bun.

Ingredients
- 3 big carrots
- 1/2 cup zucchini
- 1 big onion
- 2 cloves of garlic
- 7/8 cup broccoli
- 3 spring onions
- 1/2 feta cheese
- 4 slices whole wheat toast
- 1 tbsp corn starch
- 2 tsp vegetable broth
- 5/8 cup plain yogurt
- 4 tbsp breadcrumbs
- 2 eggs
- 1 tsp cumin
- 1 cup milk
- 1-2 tbsp clarified butter
Instructions
- Peel and grate the carrots. Finely chop the garlic cloves. Grate zucchini, onion, spring onions, and broccoli in a food processor. Add the feta cheese and garlic to the food processor, sprinkling the corn starch on top. Mix well.
- Place milk in a bowl and allow each slice of toast to briefly soak up some milk. Then squeeze each toast, allowing excess milk to drip back into the bowl, and add to the food processor.
- Add eggs, vegetable broth, yogurt, breadcrumbs, and seasonings to the food processor. Mix well.
- If the mixture is too soft for your liking, add more breadcrumbs to add firmness.
- In a large skillet heat the clarified butter ('re-solidified butter'). Form small balls of the mixture and flatten out to make patties in the pan. Roast until golden brown on each side on medium heat.
- Serve in pretzel bun with lettuce, tomatoes, sauce remoulade, and chopped gherkins
