
Smoked Mackerel Rillettes
Rillettes usually refers to meat such as pork or duck preserved in fat, but for a lighter take, smoked mackerel is combined with chives, butter, and sour cream. Serve the rillettes on pumpernickel toast points, in endive leaves, cucumber slices, or with whole grain crackers.
Ingredients
- 6.7 oz canned smoked mackerel in natural juice
- 2 tbsp unsalted butter softened
- 3 tbsp minced chives
- 1 medium shallot minced
- 1 tsp sherry vinegar
- 1 tbsp fresh lemon juice
- 1/3 cup sour cream
- pumpernickel toast points, endive spears, cucumber slices, or crackers for serving
Instructions
- Combine the smoked mackerel and the butter in a medium bowl.
- Add chives, shallot, vinegar, and lemon juice, and mix gently to combine well.
- Fold in the sour cream and chill mixture for at least one hour before serving.
