Chocolate Almond Cherry Cake
A family favorite cake made with chocolate, ground almonds, and morello cherries. The cake's name sake comes from Paul Hörbiger, a beloved Austrian movie star from the 1940s to the 1960s.
Ingredients
- 5 oz confectionary sugar
- 5 oz butter
- 4 eggs
- dash salt
- 4 tbsp breadcrumbs
- 3 oz semi sweet chocolate
- 5 oz grated almonds
- 14 oz morello cherries or raspberries, blueberries, blackberries
- 1 cup whole almonds
- 1/2 cup chocolate glaze
Instructions
- Heat oven to 350 F
- Combine the confectioners sugar, butter, egg yolks and salt. Beat together well until foamy.
- Beat the egg whites until stiff. Add and carefully fold in the breadcrumbs, chocolate, ground almonds, and egg whites.
- Pour batter into 9 inch form and top with the berries.
- Bake for 30 – 40 min.
- Remove from oven and let cool down
- Optional: Add chocolate glaze or melted chocolate couverture, whole almonds and pitted cherries on top
