Gnocchi with pork meatballs in a simple tomato sauce. Kid-friendly recipe.
- 14 oz ground pork
- 2 tomatoes
- 1 onion
- 2 tablespoon rapeseed oil or canola oil
- 1 can stewed tomatoes 1 pound
- 1 cup vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon mild paprika
- salt and pepper
- 1-2 packages ready-made gnocchi
- 1 tablespoon grated cheese
Shape the ground pork into small meatballs.
Wash the tomatoes and cut them into dices. Peel and finely dice the onion. In a saucepan heat the rapeseed oil. Sauté the onions, add the diced tomatoes and sauté for about 4 minutes.
Add the canned tomatoes and the vegetable broth. Season to taste with oregano, paprika, pepper and salt. Let the sauce simmer 15 minutes over medium heat.
Add the pork meatballs and let everything simmer another 10 minutes.
Cook the gnocchi according to the instructions on the package, place them in a large serving bowl and serve with the meatball sauce and cheese.
