What Is Mürbes Käsegebäck?
Mürbes Käsegebäck is a savory German cheese pastry with a tender, crumbly texture. The word mürbe refers to a short, delicate pastry texture, while Käsegebäck means cheese pastry or cheese biscuits.
This recipe combines wheat flour, butter, grated cheese, cream, paprika, salt, and a little baking powder. After chilling, the dough can be rolled out and cut into small crackers, biscuits, or long cheese sticks. The pieces are brushed with egg yolk and finished with toppings like poppy seeds, sesame, caraway, or chopped pistachios.
